Step 1: Selecting and Preparing the Peaches
Choose the right peaches: Opt for ripe but firm peaches without bruises or soft spots. Firmer peaches hold their shape better after freezing.
Wash: Gently rinse the peaches under cool running water. Use your hands or a soft brush to remove any dirt or fuzz.
Peeling (optional but recommended): Peach skins can become tough after freezing. To peel:
Blanching method: Bring a pot of water to a boil and prepare a bowl of ice water. Score a small “X” at the bottom of each peach. Submerge the peaches in boiling water for 30-60 seconds, or until the skin near the “X” begins to peel back.
Cool immediately: Use a slotted spoon to transfer the peaches to the ice bath to stop the cooking process.
Peel: The skin should now slide off easily starting from the “X”.

Flash freeze:
