Step-by-Step Guide to Freezing Fresh Peaches in Ziploc Bags

Step 1: Selecting and Preparing the Peaches


Choose the right peaches: Opt for ripe but firm peaches without bruises or soft spots. Firmer peaches hold their shape better after freezing.


Wash: Gently rinse the peaches under cool running water. Use your hands or a soft brush to remove any dirt or fuzz.


Peeling (optional but recommended): Peach skins can become tough after freezing. To peel:


Blanching method: Bring a pot of water to a boil and prepare a bowl of ice water. Score a small “X” at the bottom of each peach. Submerge the peaches in boiling water for 30-60 seconds, or until the skin near the “X” begins to peel back.


Cool immediately: Use a slotted spoon to transfer the peaches to the ice bath to stop the cooking process.


Peel: The skin should now slide off easily starting from the “X”.

Step 2: Cutting and Pre-Treating (to Prevent Browning)


Pit and cut: Halve the peeled peaches, remove the pits, and slice them into wedges, chunks, or slices as desired.


Prevent browning: Peach flesh oxidizes quickly when exposed to air. To avoid discoloration:


Acidulated water bath: Soak the peach pieces for 3-5 minutes in a mixture of 1 tablespoon (15 ml) of lemon juice per liter of water. Alternatively, dissolve crushed vitamin C tablets in water for a neutral-tasting option.


Sugar syrup method (ideal for desserts): Prepare a 30-40% sugar syrup (ratio of 4 parts sugar to 10 parts water), let it cool, and soak the peach pieces in it. This helps preserve texture and flavor.


Step 3: Drying and Flash Freezing (IQF)


Drain thoroughly: Pat the peach pieces dry with a clean kitchen towel or paper towels. Excess moisture forms large ice crystals during freezing, which can damage the fruit’s texture.


Flash freeze:


Arrange the peach pieces in a single layer on a parchment-lined baking sheet, ensuring they don’t touch.


Freeze for 1-2 hours, or until the pieces are completely solid.


Step 4: Packing in Ziploc Bags


Use quality bags: Choose thick, freezer-safe Ziploc bags to prevent freezer burn and odor transfer.


Fill the bags: Transfer the flash-frozen peach pieces into the bags. Lay the bags flat for easy stacking and quicker thawing.


Remove air: Seal the bag almost completely, leaving a small opening. Insert a straw to suck out excess air, then seal fully. If no straw is available, press out as much air as possible by hand before sealing.


Label: Use a permanent marker to write the contents (e.g., “Frozen Peach Slices”) and the date on the bag.


Step 5: Freezing and Storage


Place the sealed bags flat in the freezer.


At a standard freezer temperature of -18°C (0°F), frozen peaches can be stored for 8-12 months, though they are best consumed within 6 months for optimal flavor.
